Simple and Satisfying

I love quiche and savory tarts. They are so simple, yet versatile and most importantly tasty as can be. Yesterday, we made Quiche Lorraine and Tarte a L'Oignon. Like I said, dinner for the week!


We started with flour and egg yolks to make a dough (Pate Brisee)


Mixed it all together, adding salt.


Then tons of butter!



And rolled into a log.



Separated into 4 pieces and put them in the fridge to rest. "Respect the dough," Chef says, pronouncing the gh at the end so it almost sounds like dog.



Roll out the dough and make it pretty! :)



For the Quiche Lorraine, add bacon and cheese.



Cover with eggs, milk, cream and seasonings (see why it is so tasty now?).



And bake until golden brown.



Prep a second tart crust.



Thinly slices 6 onions.



Caramelize the onions.



Add onions and bacon to tart. Then add the eggs, milk and cream.



And bake until it looks like this yumminess.



Try not to let this happen.
